Project Description

Hydraulic Ale Works has been over 5 years in the making, a dream that cousins Shane and Ryan shared with each other over beers during a family gathering. After partnering with trusted, longtime friends and considering dozens of locations, they found themselves right in the epicenter of renewed development on the Elkhart River, only 200 ft. from the hydraulic canals that once powered the entire city. Because we are so close to the hydraulic canals, we feel a connection with the power of water. The quality of brewing water is extremely important because it is a major part of what beer is. Water is what powers beer, in the same way it powered Elkhart back in the 1800’s. That’s why we treat the water, along with our other ingredients for both our beer and our food, with such respect. We work hard to understand how the process of brewing works and experiment with surprising ingredients in the food like spent grain, wort, and hops. By doing this, we are able to create phenomenal dishes that not only pair perfectly with our beers, but also combine their flavor profiles into something exciting and new. We push the limits of both beer and food so they can have the opportunity to elevate each other.
